TOPPING:
1/2 cup flour
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup butter, cut into pieces
2/3 cup pecans, chopped
Mix flour, sugar and cinnamon. Add but and mix until broken into pieces. Add nuts and mix thoroughly. Mixture will be lumpy. Cover and refrigerate.
CAKE:
1/2 cup butter
1 cup sugar
2 eggs, beaten
1-1/4 teaspoon vanilla
1-1/2 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
3-1/4 cups apples, peeled and cut into pieces
Preheat oven to 350 degrees.
Cream butter and sugar. Beat in eggs and vanilla. Sift together flour, baking soda and cinnamon. Fold into butter mixture. Add apples, mixing well. Pour into greased pan and sprinkle with topping. Bake 40 minutes. Cool thoroughly.
